A medium-dark roast dissolves faster and turns bitter if you push it.

A Natural coffee gives its fruit up early and its ferment late.

This recipe uses 20 g. Prices per cup are worked out at 15 g for every coffee, so they compare.

1. Pack the coffee into the upper chamber and level it.
2. Pour in the hot water, cover, and leave it alone.
3. Chicory drips more slowly than coffee. Give it twenty to twenty-five minutes.
4. Mix one part decoction to four parts hot milk. Chicory carries further than coffee does.

It is ground for this brewer already. If it runs through too fast, use a little more coffee rather than reaching for a finer grind.

Roasted 6 days ago, which is about as good as it gets.
